The Dao of sushi
Sushi exhibits several qualities that transcend the dish and its preparation.
Care, quality, design and complexity. Simply put, sushi is artistic.
Preparing sushi is a craft. An itamae (sushi chef) takes pride in each roll he creates; using high-quality cuts of fish and ingredients worthy of such time and care.
An itamae is conscious and particular of the presentation of the dish. Sushi presentation implements many elements of design. This takes meticulous planning and creativity.
Finally, there is its taste. Sushi comes in a variety of intricate tastes. Using relatively few ingredients, it's amazing how complex each dish is.
These are elements I try to incorporate into my everyday life, through the content I create and the work I produce.
